Instructions
 

Preparation

  • Heat the olive oil in a large pot or Dutch oven over medium heat until shimmering.
  • Add the diced chicken and cook, stirring occasionally, until it turns white and is no longer pink in the center, about 5–7 minutes.
  • Add the chopped onion and bell pepper. Sauté for about 3–4 minutes until the onion is translucent.
  • Stir in the minced garlic and cook for an additional 1–2 minutes until fragrant.
  • Add the drained black beans, drained pinto beans, and drained corn kernels. Stir well to combine.
  • Pour in the diced tomatoes and diced tomatoes with green chilies, followed by the taco seasoning mix. Mix well.
  • Pour in the chicken broth and stir to combine. Increase heat to bring to a gentle boil.
  • Once boiling, reduce heat to low and let it simmer for about 15–20 minutes.
  • Taste and adjust seasoning with salt and black pepper as needed.
  • Ladle the soup into bowls and top with your choice of optional toppings.

Notes

Use fresh ingredients for better flavor and allow the soup to simmer for richer taste. Customize toppings based on preferences.
