Ingredients
  

Chicken

  • 2 boneless, skinless chicken breasts tender and juicy base of the dish
  • 1 tsp salt enhances every flavor
  • 1/4 tsp freshly cracked black pepper adds gentle heat
  • 1 tsp sweet paprika gives warmth and color
  • 1 tsp onion powder adds savory depth
  • 1 tsp dried thyme a soft herby touch
  • 1/4 cup plain flour for coating chicken
  • 1 tbsp olive oil for searing and flavor
  • 1 tbsp unsalted butter helps with that buttery richness

Sauce

  • 1 tbsp unsalted butter smooth base for sauce
  • 1 tbsp freshly minced garlic main flavor
  • 1/2 cup chicken stock adds depth
  • 300 ml thickened (heavy) cream for creaminess
  • 1 tsp Dijon mustard gentle tang
  • 1/2 cup grated parmesan adds salty, nutty flavor
  • sea salt flakes and freshly cracked pepper to taste

Instructions
 

  • Sprinkle chicken with salt, pepper, paprika, onion powder, and thyme. Coat in flour until evenly covered.
  • Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken for 5–6 minutes, flipping once, until golden and cooked through.
  • Transfer chicken to a plate and let it rest while you make the sauce.
  • In the same pan, melt butter. Add garlic and cook for 30 seconds until fragrant.
  • Deglaze pan with chicken stock, scraping up any brown bits. Let simmer for 1–2 minutes.
  • Lower heat. Add cream and mustard. Let bubble for 2 minutes to thicken slightly.
  • Add parmesan and stir until melted. Taste and season with salt and pepper if needed.
  • Return chicken to the pan, spoon sauce over, and warm through for 2–3 minutes.

Notes

Serve with mashed potatoes, pasta, rice, or steamed greens. Add lemon wedges and parsley for brightness and freshness. Store leftovers in the fridge up to 3 days. Not suitable for freezing due to cream-based sauce.
