  • 1 lb chicken breast (lean protein)
  • 2 medium sweet potatoes (sweet and creamy texture)
  • 1 cup rice (brown or white, provides structure)
  • 2 tablespoons olive oil (adds moisture and flavor)

Preparation

  • Preheat your oven to 400°F.
  • Wash and peel the sweet potatoes, then cut them into bite-sized cubes.
  • Toss the sweet potato cubes with one tablespoon of olive oil, salt, and pepper.
  • Spread the cubes on a baking sheet in a single layer.
  • Rinse the rice under cold water until the water runs clear.
  • Cook the rice according to package instructions.

Cooking

  • Place the sweet potatoes in the preheated oven and roast for 25-30 minutes, tossing halfway through.
  • In a separate skillet, heat the remaining tablespoon of olive oil over medium heat and season the chicken with salt and pepper.
  • Cook the chicken until it's no longer pink in the center and has an internal temperature of 165°F.
  • Let the chicken rest for a few minutes before slicing it into bite-sized pieces.

Assembly

  • Fluff the cooked rice with a fork.
  • Divide the rice among serving bowls, topped with roasted sweet potatoes and sliced chicken.
  • Add optional toppings as desired.

Notes

Ensure sweet potatoes are cut uniformly for even cooking. Let chicken rest before slicing to maintain juiciness.
