Preparation

  • Preheat your oven to 400 degrees Fahrenheit.
  • Peel and chop the sweet potatoes into uniform cubes.
  • Spread the cubed sweet potatoes onto a baking sheet, drizzle with one tablespoon of olive oil, and sprinkle with salt and pepper. Toss until well-coated.

Roasting

  • Place the baking sheet in the preheated oven and roast the sweet potatoes for about 25 to 30 minutes, stirring halfway through.

Cooking Rice

  • Rinse the rice under cold water to remove excess starch.
  • In a medium saucepan, combine the rinsed rice with two cups of water. Bring to a boil, then reduce heat to low, cover, and let cook until tender.

Cooking Chicken

  • Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper.
  • Add the chicken to the pan and cook for about 5 to 7 minutes on each side, or until it reaches an internal temperature of 165 degrees Fahrenheit.

Final Steps

  • Remove the chicken from the skillet and let it rest for a few minutes before slicing into bite-sized pieces.
  • To serve, spoon a portion of rice into bowls and top with the roasted sweet potatoes and sliced chicken. Add any optional veggies on top.
  • Garnish with fresh herbs if desired.

Cut sweet potatoes evenly for consistent cooking. Rinse the rice well to avoid clumping. Allow the chicken to rest before slicing for juiciness.
